Ingredients
  

  • 1 large spaghetti squash
  • 2 tablespoons olive oil
  • 3 garlic cloves minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh parsley chopped
  • ¼ cup Parmesan cheese grated
  • 1 tablespoon lemon juice
  • ½ teaspoon chili flakes optional
  • 1 tablespoon butter

Instructions
 

Prepare the Squash

  • Wash the spaghetti squash well. Dry it with a towel. Cut it in half lengthwise. Scoop out the seeds with a spoon. Brush olive oil over the inside. Sprinkle salt and pepper on top.

Roast Until Tender

  • Place the squash halves cut-side down on a baking tray. Bake at 400°F for about 40 to 45 minutes. Roast until soft. The skin should press in easily with your fingers.

Cook the Garlic Butter

  • Heat butter in a small pan. Add minced garlic. Cook for one minute only. Stir gently. Do not burn it. Add lemon juice and mix well. This gives rich and fresh flavor.

Make the Squash Strands

  • Take the roasted squash out. Let it cool slightly. Use a fork to scrape inside. It will turn into spaghetti-like strands. Place those soft strands into a large bowl.

Add Flavor and Mix
