Ingredients

  • 2 carrots peeled and chopped
  • 2 celery stalks chopped

  • 1 teaspoon fresh rosemary chopped
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 4 cups vegetable broth
  • 2 cans cannellini beans drained and rinsed
  • 1 cup chopped tomatoes
  • 1 parmesan rind optional
  • 2 cups baby spinach
  • Lemon juice to taste

Instructions
 

  • Heat olive oil in the pot.
  • Add onion, carrots, and celery.
  • Cook until soft and fragrant.
  • Stir in garlic and herbs.
  • Cook briefly until aromatic.
  • Add broth, beans, and tomatoes.
  • Add parmesan rind if using.
  • Simmer gently for twenty minutes.
  • Remove rind carefully.
  • Stir in spinach until wilted.
  • Season with lemon juice.
  • Taste and adjust seasoning.
