Ingredients
  

  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 1 cup raw peanuts
  • 2 medium jalapenos finely diced (remove the seeds for a milder flavor)
  • 1 teaspoon baking soda
  • 1 tablespoon butter
  • 1/2 teaspoon salt

Instructions
 

  • Prep Work: Line a large baking sheet with parchment paper and set aside.
  • Sugar Mixture: In a saucepan, combine sugar, corn syrup, and water. Mix continuously over medium heat until all the sugar has melted.
  • Cooking: Insert a candy thermometer and continue cooking without stirring until the temperature reaches 295°F (hard-crack stage).
  • Adding Ingredients: Quickly stir in peanuts, chopped jalapenos, butter, and salt. Continue to cook until the mixture returns to 295°F.
  • Final Touch: Remove from heat, carefully stir in baking soda, and immediately pour onto the prepared baking sheet. Spread into an even layer.
  • Cooling: Allow to cool completely before breaking into pieces.
