Ingredients

  • 4 pork tenderloin or 500 grams pork tenderloin
  • 3 tablespoons Dijon mustard
  • 2 tablespoons yellow mustard
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • 3 garlic cloves minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • ½ cup chicken broth
  • 1 tablespoon butter
  • Fresh parsley for garnish optional

Instructions

Prepare the Pork

  • Take the pork tenderloin out of the fridge. Let it sit for 10 minutes. This helps even cooking. Pat it dry with paper towels. Dry meat gives a better sear. Season with salt and black pepper on all sides.

Make the Flavor Mix

  • In a small bowl, mix garlic, rosemary, thyme, lemon zest, honey, and mustard. Stir well until combined. This mixture adds rich flavor. It smells fresh and tasty. Keep it ready for later use.

Heat the Pan

  • Place a large frying pan on medium heat. Add olive oil and let it warm up. The oil should be hot but not smoking. A hot pan helps create a golden crust.

Sear the Pork

  • Place the pork in the hot pan. Sear each side for 2–3 minutes. Turn it using tongs. You want a golden brown color. This locks in juices and adds deep flavor.

Add Butter and Herbs

  • Add butter to the pan. Let it melt slowly. Spoon the butter over the pork. This step adds richness. It also keeps the meat moist and soft.

Apply the Flavor Mix

  • Now spread the garlic and herb mixture over the pork. Coat it evenly. The smell at this stage is amazing. Make sure every side gets covered.

Cook in the Oven

  • Transfer the pork to an oven-safe dish. Bake at 180°C for 15–18 minutes. Cooking time depends on thickness. The inside should be slightly pink for best results.

Rest the Meat

  • Remove the pork from the oven. Let it rest for 5–10 minutes. Do not skip this step. Resting keeps the juices inside. Slice after resting for perfect texture.

Slice and Serve

  • Slice the pork into thick pieces. Arrange on a plate. Spoon pan juices on top. Serve warm and enjoy every bite.

Notes

  • Do not overcook the pork. It becomes dry quickly
  • Use a meat thermometer for perfect results
  • Add chili flakes for a spicy twist
  • Swap rosemary with oregano if needed
  • Use maple syrup instead of honey for sweetness
  • Add vegetables to the pan for a complete meal
