Ingredients
  

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground ginger
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup unsalted butter melted
  • 3/4 cup dark molasses
  • 3/4 cup hot water
  • 1/2 cup packed brown sugar
  • 1 large egg

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper cups.
  • Mix the flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg in a large bowl.
  • In another bowl, whisk together the melted butter, molasses, hot water, and brown sugar until well blended.
  • Beat in the egg to the molasses mixture.
  • Combine Gently blend the wet and dry mixes together until they are just combined. It's important not to overmix to keep the muffins light and airy.
  • Fill Spoon the batter into the muffin cups, filling each to about three-quarters full. This ensures they have enough room to rise without spilling over.
  • Bake Bake the muffins for approximately 20 minutes. Check doneness by inserting a toothpick into the center of a muffin; if it comes out clean, they are ready to be taken out of the oven.

Notes

  1. For optimal results, let all ingredients come to room temperature before starting. This helps in mixing and can affect the final texture of the muffins.
  2. Do not over-mix the batter; it should be slightly lumpy.
  3. For a more intense flavor, you can increase the amount of spices slightly.
