Ingredients

  • 2 cups cooked shredded chicken
  • 2 cans 15 oz each white beans, drained
  • 1 small onion chopped
  • 3 cloves garlic minced
  • 1 tablespoon olive oil
  • 2 cups chicken broth
  • 1 cup milk
  • 4 oz cream cheese softened
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon paprika
  • Salt and black pepper to taste
  • 1 cup corn optional
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions

Cook the Onion and Garlic

  • Heat olive oil in a large pot over medium heat. Add chopped onion and cook until soft. Stir often. Add garlic and cook for one minute until fragrant. This builds the base flavor.

Add Spices

  • Sprinkle cumin, chili powder, and paprika into the pot. Stir well to coat the onions. Let the spices cook for two minutes. This step makes the chili more flavorful.

Add Chicken and Beans

  • Add shredded chicken and white beans to the pot. Stir everything gently. Make sure the chicken is evenly mixed with the spices and onions.

Pour in Broth and Milk

  • Slowly add chicken broth and milk. Stir well to combine. Bring the mixture to a gentle boil, then reduce heat to low. Let it simmer for 15 minutes.

Add Cream Cheese

  • Cut cream cheese into small pieces. Add them to the pot slowly. Stir until fully melted and smooth. This gives the chili a creamy texture.

Add Corn and Lime Juice

  • Add corn if you like a sweet touch. Then squeeze fresh lime juice into the chili. Stir well. This adds brightness and balances the flavors.

Taste and Adjust

  • Taste your chili. Add salt and pepper as needed. You can also add more spices if you like stronger flavor.

Garnish and Serve

  • Turn off the heat. Add fresh cilantro on top. Serve hot with your favorite toppings like cheese or tortilla chips.

Notes

  • Use rotisserie chicken for faster cooking
  • Add green chilies for extra heat
  • Replace milk with heavy cream for richer taste
  • Use Greek yogurt instead of cream cheese for a lighter version
  • Add jalapeños if you love spicy food
  • Serve with crusty bread for a complete meal
