Ingredients
  

  • 1 cup Kodiak Cakes Power Cakes mix
  • 1 large ripe banana mashed
  • 1 cup milk any variety works
  • 1 egg
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • Butter or oil for cooking
  • Optional toppings: sliced bananas nuts, extra honey or syrup

Instructions
 

  • In a large bowl, whisk together the Kodiak mix, mashed banana, milk, egg, honey, vanilla extract, and cinnamon until smooth.
  • Warm a non-stick skillet or griddle on medium heat and apply a light coating of butter or oil.
  • Ladle 1/4 cup of batter for each pancake into the preheated skillet. Allow the pancakes to cook until bubbles appear on the surface and the edges begin to firm up, typically taking about 2-3 minutes.
  • Gently flip the pancakes and continue cooking them for an additional 2 minutes, or until they turn golden brown and are fully cooked.
  • Repeat with the remaining batter, adding more butter or oil as needed for cooking.
  • Serve hot with your choice of toppings.
