Ingredients
  

  • 400 g cheese tortellini
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated parmesan cheese
  • 1 teaspoon chili flakes
  • 1 teaspoon dried oregano
  • ½ teaspoon black pepper
  • Salt to taste
  • ½ cup sun-dried tomatoes chopped
  • 1 cup spinach fresh
  • Fresh basil for garnish

Instructions
 

Boil the Tortellini

  • Bring a pot of salted water to a boil. Add the tortellini and cook according to package instructions. Stir gently to prevent sticking. Once cooked, drain the tortellini and set aside. Do not overcook, or it will become too soft.

Heat the Oil and Garlic

  • Place a large pan over medium heat. Add olive oil and let it warm up. Add minced garlic and cook for about one minute. Stir often so it does not burn. You want it fragrant and lightly golden.

Add the Sun-Dried Tomatoes

  • Add chopped sun-dried tomatoes to the pan. Stir well and cook for two minutes. This step brings out their rich flavor. It also adds a slightly sweet and tangy taste to the dish.

Make the Creamy Sauce

  • Pour in the heavy cream and chicken broth. Stir slowly and let it simmer. Add oregano, chili flakes, salt, and pepper. Let the sauce cook for about five minutes until slightly thick.

Add Parmesan Cheese

  • Sprinkle in the grated parmesan cheese. Stir continuously until it melts smoothly into the sauce. This makes the sauce rich and creamy. Taste and adjust seasoning if needed.

Add Spinach

  • Add fresh spinach to the sauce. Stir gently until it wilts. This takes about two minutes. It adds color and a fresh taste to the dish.

Combine Tortellini with Sauce

  • Add the cooked tortellini to the pan. Gently mix everything together. Make sure each piece is coated in the creamy sauce. Cook for two more minutes on low heat.
