Ingredients

For the Strawberries

  • Fresh strawberries – 4 cups sliced
  • Sugar – 1/3 cup
  • Lemon juice – 1 tablespoon

For the Shortcake

  • All-purpose flour – 2 cups
  • Baking powder – 1 tablespoon
  • Salt – 1/2 teaspoon
  • Sugar – 1/4 cup
  • Cold butter – 1/2 cup
  • Heavy cream – 3/4 cup
  • Egg – 1 large
  • Vanilla extract – 1 teaspoon

For the Whipped Cream

  • Heavy whipping cream – 1 cup
  • Powdered sugar – 2 tablespoons
  • Vanilla extract – 1 teaspoon

Instructions

Prepare the Strawberries

  • Wash the strawberries well. Slice them into a bowl. Add sugar and lemon juice. Mix gently. Let them sit for 20 minutes. They will become juicy, sweet, and full of fresh flavor.

Heat the Oven

  • Set your oven to 425°F. Line a baking tray with parchment paper. This keeps the shortcakes from sticking. A hot oven helps them bake golden outside and soft inside.

Mix Dry Ingredients

  • Take a large bowl. Add flour, baking powder, salt, and sugar. Mix everything well with a whisk. This helps the shortcake rise evenly and gives nice flavor in every bite.

Add the Butter

  • Cut cold butter into small cubes. Add it to the flour mixture. Use a pastry cutter or fork. Mix until it looks crumbly like sand. Small butter bits make soft biscuits.

Add Wet Ingredients

  • In another bowl, whisk cream, egg, and vanilla. Pour into the flour mixture. Stir gently until dough forms. Do not overmix. Soft mixing makes tender shortcake every time.

Shape the Dough

  • Place dough on a lightly floured surface. Pat it gently. Make it about one inch thick. Cut into round pieces. Place them on the baking tray with space between.

Bake Until Golden

  • Bake for 15 to 18 minutes. The tops should look golden brown. Your kitchen will smell warm and buttery. Let them cool slightly before slicing and filling.

Make Fresh Whipped Cream

  • Pour heavy cream into a bowl. Add powdered sugar and vanilla. Beat until soft peaks form. It becomes fluffy, creamy, and light. Homemade whipped cream tastes wonderfully fresh.

Build the Shortcake

  • Slice each shortcake in half. Add juicy strawberries. Spoon whipped cream over them. Place the top half on. Add more cream and berries. Serve fresh and enjoy.

Notes

  • Use ripe strawberries for best flavor.
  • Chill cream before whipping.
  • Keep butter very cold.
  • Do not overwork dough.
  • Add orange zest for bright flavor.
  • Try blueberries with strawberries.
  • Add mint leaves for freshness.
  • Brush tops with cream before baking for shine.
