Ingredients

  • pounds ground beef
  • 1 cup fresh breadcrumbs
  • ½ cup milk
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2 large eggs
  • ¼ cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons fresh parsley chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the glaze

  • cup ketchup
  • 1 tablespoon brown sugar
  • 1 teaspoon mustard

Instructions

Prepare the Breadcrumb Mixture

  • Place breadcrumbs in a large bowl. Pour milk over the breadcrumbs. Let them soak for a few minutes. This mixture helps keep the meatloaf soft and moist. It also helps the loaf hold together during baking.

Cook the Onion and Garlic

  • Heat a small pan over medium heat. Add a little oil if needed. Cook chopped onion for about 4 minutes until soft. Add minced garlic and cook for one more minute. Let the mixture cool slightly before adding to the meat.

Mix the Meatloaf Base

  • Add ground beef to the bowl with soaked breadcrumbs. Add eggs, cooked onion mixture, ketchup, Worcestershire sauce, parsley, salt, and pepper. Mix gently using a spoon or your hands. Stop mixing once everything looks evenly combined.

Shape the Meatloaf

  • Line a baking sheet with parchment paper. Place the meat mixture on the sheet. Shape it into a loaf using your hands. Try to keep the thickness even. This helps the meatloaf cook evenly.

Make the Glaze

  • In a small bowl, mix ketchup, brown sugar, and mustard. Stir well until smooth. Spread half of this glaze over the top of the meatloaf. Save the rest for later.

Bake the Meatloaf

  • Preheat the oven to 350°F (175°C). Place the meatloaf in the oven. Bake for about 45 minutes. Then remove the pan carefully and spread the remaining glaze on top.

Finish Baking

  • Return the meatloaf to the oven. Bake for another 15 minutes. The meatloaf should be fully cooked and slightly caramelized on top. The inside temperature should reach 160°F.

Rest Before Slicing

  • Remove the meatloaf from the oven. Let it rest for about 10 minutes. This step helps the juices stay inside the meat. It also makes slicing easier and cleaner.

Notes

  • Use a mix of beef and pork for extra flavor.
  • Add grated carrots for extra moisture and nutrition.
  • Try topping with barbecue sauce instead of ketchup glaze.
  • Use oats instead of breadcrumbs if needed.
  • Add shredded cheese inside the meat mixture for a cheesy twist.
  • Let the meatloaf rest before slicing to keep it juicy.
