  • 6 tablespoons unsalted butter softened
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh sage chopped
  • 1 large onion quartered
  • 1 lemon cut in half
  • 4 garlic cloves
  • 2 carrots cut into chunks
  • 2 celery stalks cut into chunks
  • 2 cups chicken broth

Prepare the Turkey

  • Remove the turkey from the fridge 30 minutes before cooking. Pat it dry using paper towels. This step helps the skin roast better and become golden.

Preheat the Oven
