Ingredients

  • 4 chicken thighs bone-in, skin-on
  • 2 tablespoons olive oil
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 1 cup mushrooms sliced
  • 1 cup canned chopped tomatoes
  • 1 tablespoon tomato paste
  • ½ cup chicken stock
  • ¼ cup dry white wine optional
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon fresh parsley chopped
  • 1 teaspoon lemon juice

Optional serving ideas:

  • Fried eggs
  • Toasted bread
  • Steamed rice

Instructions

Season the Chicken

  • Pat the chicken thighs dry with paper towels. Sprinkle salt and black pepper on both sides. Proper seasoning helps the chicken taste better. Let the chicken rest for a few minutes while preparing the other ingredients.

Brown the Chicken

  • Heat olive oil in a large skillet over medium heat. Place the chicken thighs skin-side down. Cook for about 5 minutes until golden brown. Flip and cook the other side for another 4 minutes. Remove chicken and set aside.

Cook the Onion and Garlic

  • In the same pan, add the chopped onion. Cook for about 3 minutes until soft. Add the minced garlic and stir for another minute. The aroma will become rich and inviting.

Add the Mushrooms

  • Now add the sliced mushrooms to the pan. Stir well and cook for about 4 minutes. Mushrooms release moisture and absorb flavors from the onion and garlic.

Build the Sauce

  • Add chopped tomatoes and tomato paste to the pan. Stir well until everything mixes nicely. Pour in the chicken stock and white wine. This creates a flavorful base for the Mary Berry Chicken Marengo Recipe.

Add Herbs and Seasoning

  • Drop in the bay leaf and sprinkle dried thyme. Taste the sauce and adjust salt and pepper if needed. Herbs bring a beautiful earthy flavor to the dish.

Return the Chicken

  • Place the browned chicken thighs back into the pan. Make sure the chicken sits partly inside the sauce. This helps it absorb all the delicious flavors.

Simmer the Dish

  • Cover the pan with a lid and reduce the heat to low. Let the chicken simmer gently for about 25 minutes. The sauce will thicken and the chicken becomes very tender.

Add Fresh Touches

  • Remove the bay leaf from the pan. Add fresh parsley and lemon juice. These ingredients brighten the flavor and make the dish taste fresh.

Serve and Enjoy

  • Serve the chicken hot with plenty of sauce. Many people enjoy it with fried eggs and toasted bread. Rice or mashed potatoes also taste wonderful.

Notes

  • Always brown the chicken well for deeper flavor.
  • Use fresh herbs if available for better aroma.
  • Add olives for a Mediterranean twist.
  • A splash of cream can create a richer sauce.
  • Try boneless chicken if you want faster cooking.
  • Add carrots or bell peppers for extra vegetables.
