Ingredients

  • 2 Earl Grey tea bags
  • 1 cup hot water
  • 1 cup mixed dried fruit raisins, sultanas, currants
  • 1 ½ cups self-raising flour
  • ½ cup brown sugar
  • 1 large egg
  • 2 tablespoons melted butter
  • ½ teaspoon baking powder
  • ½ teaspoon vanilla extract
  • 1 pinch salt

Instructions

Brew the Earl Grey Tea

  • Boil water and pour it over Earl Grey tea bags. Let it steep for 5 to 7 minutes. The tea should be strong and fragrant. Remove tea bags carefully. Add dried fruits into the warm tea. Let them soak for at least 30 minutes. This makes fruits soft and full of flavour.

Prepare the Loaf Tin

  • Line your loaf tin with baking paper. This helps remove the cake easily later. Preheat your oven to 170°C. A steady temperature is important for even baking. Grease the tin lightly with butter. Set it aside while you prepare the batter.

Mix Dry Ingredients

  • Take a large bowl and add flour, baking powder, sugar, and salt. Mix them gently using a spoon. Make sure everything is evenly combined. This step helps create a smooth texture later. Avoid overmixing dry ingredients at this stage.

Add Wet Ingredients

  • Now add soaked tea fruits into the dry mix. Pour in egg, melted butter, and vanilla extract. Slowly mix everything together. The batter will look thick and slightly sticky. Stir gently until no dry flour remains visible.

Fill the Loaf Tin

  • Pour the batter into the prepared loaf tin. Spread it evenly using a spoon. Tap the tin lightly on the counter. This removes air bubbles inside. Smooth the top for a nice finish. The batter should sit evenly in the tin.

Bake the Loaf

  • Place the loaf tin in the oven. Bake for 55 to 60 minutes. Check with a toothpick in the center. If it comes out clean, the loaf is ready. The top should look golden brown and slightly firm.

Cool and Serve

  • Remove the loaf from the oven carefully. Let it cool in the tin for 10 minutes. Then transfer it to a cooling rack. Allow it to cool completely before slicing. This helps the texture set properly and stay moist.

Notes

  • Use strong Earl Grey tea for deeper flavour
  • Soak fruits overnight for richer taste
  • Add orange zest for a citrus twist
  • Replace mixed fruits with chopped dates
  • Sprinkle icing sugar before serving
  • Serve with butter for extra richness
  • Do not overmix batter for soft texture
