Equipment

  • Large skillet or Dutch oven
  • Sharp knife
  • Cutting board
  • Measuring spoons and cups
  • Mixing bowl
  • Wooden spoon or spatula
  • Colander
  • Stove or cooktop

Ingredients

  • 1 lb fresh green beans trimmed
  • 6 slices thick-cut bacon chopped
  • 1 small yellow onion finely diced
  • 2 cloves garlic minced
  • 1 tbsp brown sugar
  • ½ tsp smoked paprika
  • ¼ tsp black pepper
  • 1 cup chicken broth low sodium
  • 1 tbsp apple cider vinegar
  • Salt to taste
  • Optional: red pepper flakes for heat

Instructions

  • Cook the Bacon: In a large skillet or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving about 1 tablespoon of bacon grease in the pan.
  • Sauté the Onions and Garlic: Add the diced onion to the skillet and sauté until soft and golden, about 5 minutes. Stir in the minced garlic and cook for another 30 seconds.
  • Add Seasonings: Sprinkle in the brown sugar, smoked paprika, and black pepper. Stir to combine and let the sugar slightly caramelize with the onions.
  • Deglaze and Simmer: Pour in the chicken broth and apple cider vinegar, scraping up any browned bits from the bottom of the pan. Bring to a gentle simmer.
  • Add the Green Beans: Add the trimmed green beans and stir well. Cover and simmer for 15–20 minutes, or until the beans are tender but not mushy.
  • Finish and Serve: Return the cooked bacon to the skillet, stir everything together, and season with salt to taste. Add red pepper flakes if you like a little heat. Serve warm.

Notes

  • Use Fresh Green Beans: For the best texture and flavor, always opt for fresh green beans over canned or frozen.
  • Low and Slow Simmer: Don’t rush the cooking process. Let the beans simmer gently to absorb all the savory flavors.
  • Balance the Sweetness: Brown sugar adds depth, but don’t overdo it. A light hand preserves the dish's smoky profile.
  • Deglaze Well: Scraping up the flavorful bits after cooking the onions adds a ton of umami.
  • Cook Bacon Separately: Adding it back in at the end keeps it crispy, instead of soggy.
