Ingredients
  

  • 2 lbs of baby potatoes washed and halved
  • 3 tbsp of olive oil
  • 2 tsp of salt
  • 1 tsp of black pepper
  • 1/2 cup of heavy cream
  • 1/4 cup of grated Parmesan cheese
  • 3 cloves of garlic minced
  • 2 tbsp of fresh rosemary chopped
  • 1 tbsp of fresh thyme chopped

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Toss the halved baby potatoes with olive oil, salt, and pepper, and spread them on a baking sheet.
  • Roast in the preheated oven for 25-30 minutes until golden and fork-tender.
  • In a mixing bowl, combine the roasted potatoes, heavy cream, Parmesan, garlic, rosemary, and thyme.
  • Mash the mixture lightly to blend the flavors while keeping some texture.
  • Return the mashed potatoes to the baking sheet, spread evenly, and broil for 5 minutes until the top is crispy and golden.
  • Serve warm, garnished with extra herbs or Parmesan if desired.
