Ingredients

  • 500 g Ground Lamb mince
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • $1/2$ teaspoon Ground Cinnamon
  • $1/2$ teaspoon Chili Flakes optional
  • 2 cloves of Garlic crushed
  • 1 small Red Onion finely grated
  • 3 tablespoons Fresh Parsley chopped
  • 1 tablespoon Fresh Mint chopped
  • 1 teaspoon Salt
  • $1/2$ teaspoon Black Pepper
  • Olive oil for brushing

Instructions

Prepare the Onions and Garlic

  • Peel the onion and grate it finely into a bowl. Use a garlic press to crush the garlic cloves. Grating the onion makes the meat very soft. It also adds a lot of hidden moisture to the dish.

Mix the Spices Together

  • Take a small bowl and mix the cumin and coriander. Add the cinnamon, salt, pepper, and chili flakes. Mixing them first ensures the flavor is even. Your lamb will taste the same in every single bite.

Combine the Meat and Herbs

  • Put the lamb mince into a large mixing bowl. Add the grated onion, garlic, and the spice mix. Throw in the fresh parsley and mint leaves. Use your hands to mix everything together very well.

Shape the Koftas

  • Divide the meat into eight equal portions. Roll each piece into a long sausage shape. Carefully push a skewer through the middle of each piece. Press the meat firmly so it stays on tight.

Chill the Meat Skewers

  • Place the skewers on a tray in the fridge. Let them rest for at least ten minutes. Chilling helps the meat firm up before grilling. This prevents the koftas from falling apart while cooking.

Heat the Grill Pan

  • Put your griddle pan on a high heat. Brush the pan lightly with a little olive oil. Wait until the pan starts to smoke slightly. A hot pan gives the meat a nice, dark crust.

Grill the Lamb Koftas

  • Place the skewers onto the hot griddle pan. Cook them for about 3 to 4 minutes per side. Turn them carefully using a pair of tongs. The meat should be brown and nicely charred.

Check for Doneness

  • Cut into one kofta to check the middle. It should be cooked through but still juicy inside. Do not overcook the lamb or it becomes very dry. Remove them from the heat immediately.

Let the Meat Rest

  • Place the cooked skewers on a warm plate. Cover them loosely with some foil for two minutes. Resting lets the juices spread back through the meat. It makes the koftas extra tender and soft.

Serve and Enjoy

  • Garnish the platter with extra fresh herbs and lemon. Serve the koftas while they are still very hot. Your Nigella Lamb Kofta Recipe is now ready to eat. Enjoy this feast with your favorite people!

Notes

  • Use soaked wooden skewers to prevent them from burning on the grill.
  • Add a tablespoon of tomato paste for a richer color and flavor.
  • If you dislike lamb, use ground beef or turkey instead of lamb.
  • Don't over-mix the meat or it will become tough and rubbery.
  • Serve with a side of cool yogurt and cucumber dip for balance.
  • Try adding a little bit of lemon zest for a fresh kick.
