Ingredients
  

  • 4 large potatoes washed and sliced into wedges

  • 1 cup shredded cheese cheddar or Mexican blend
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/2 cup cooked bacon bits
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced jalapeños
  • 1/4 cup cilantro chopped

Instructions
 

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Toss the potato wedges with olive oil and salt, then spread them out on the baking sheet.
  • Bake for 25-30 minutes, or until golden and crispy, turning halfway through.
  • Assemble the baked potatoes on a serving plate. Sprinkle the shredded cheese over the hot potatoes so it melts.
  • Top with sour cream, green onions, bacon bits, diced tomatoes, and jalapeños.
