Ingredients

  • 1 pound lump crab meat or imitation crab
  • 1 cup real mayonnaise full fat is best
  • 1/2 cup finely chopped celery
  • 1/4 cup finely chopped red onion
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh chopped parsley
  • 6 large lettuce leaves for serving

Instructions

Prep the Crab Meat

  • Check your crab meat for any small shell pieces. If you use imitation crab, chop it into small bite-sized chunks. Place the prepared meat into your chilled mixing bowl.

Chop the Vegetables

  • Dice your celery and red onion very finely. You want a little crunch in every single bite. Add the chopped vegetables directly into the bowl with the crab.

Create the Creamy Sauce

  • In a separate small bowl, whisk the mayonnaise and lemon juice. Add the Old Bay seasoning, garlic powder, and black pepper. Stir until the dressing is perfectly smooth.

Combine and Fold

  • Pour the mayo mixture over the crab and vegetables. Use a large spoon to fold everything together gently. Be careful not to mash the delicate crab meat pieces.

Add Fresh Herbs

  • Sprinkle the fresh chopped parsley over the top of the salad. Fold it in one last time for a pop of color. This adds a lovely garden-fresh scent.

Chill Before Serving

  • Cover the bowl tightly with plastic wrap. Place it in the refrigerator for at least one hour. Chilling allows the spices to soak into the meat perfectly.

Notes

  • Add Some Heat: Stir in a dash of hot sauce if you like a spicy kick.
  • The Crunch Factor: You can add chopped bell peppers for extra texture and bright color.
  • Bread Choices: Serve this on a buttery croissant or toasted brioche bun for a treat.
  • Seafood Mix: Try mixing crab with small cooked shrimp for a seafood medley salad.
  • Healthy Swap: Use Greek yogurt instead of half the mayo to lower the calories.
  • Herb Twist: Fresh dill or chives also taste amazing in this Southern recipe.
