Instructions
 

  • Wash spinach thoroughly.
  • Drain spinach in a colander.
  • Wilt spinach in boiling water briefly.
  • Drain and squeeze excess water.
  • Chop spinach finely.
  • Melt butter in a skillet.
  • Add onions and cook gently.
  • Stir until onions soften.
  • Add garlic and cook briefly.
  • Pour in cream and milk.
  • Stir until slightly thickened.
  • Add cream cheese slowly.
  • Stir until smooth.
  • Add Parmesan cheese.
  • Season with salt and pepper.
  • Add nutmeg gently.
  • Fold in chopped spinach.
  • Cook until heated through.
