Ingredients
  

  • 2 tablespoons olive oil
  • 200 g smoked sausage sliced
  • 2 chicken breasts cut into small pieces
  • 1 onion chopped
  • 1 green bell pepper chopped
  • 2 celery stalks chopped
  • 3 garlic cloves minced
  • 1 cup long grain rice
  • 2 cups chicken broth
  • 1 can diced tomatoes 400g
  • 1 teaspoon paprika
  • 1 teaspoon Cajun seasoning
  • ½ teaspoon thyme
  • ½ teaspoon black pepper
  • Salt to taste
  • 1 cup shrimp peeled and deveined
  • 2 tablespoons chopped parsley

Instructions
 

Cook the Sausage

  • Heat olive oil in a large pot over medium heat. Add sliced sausage and cook until browned. Stir often so it cooks evenly. Remove sausage and set aside. This step adds deep smoky flavor.

Cook the Chicken

  • In the same pot, add chicken pieces. Cook until lightly golden and fully cooked. Stir well so it does not stick. Remove and keep with the sausage for later use.

Sauté the Vegetables

  • Add onion, bell pepper, and celery to the pot. Cook until soft and fragrant. This takes about five minutes. Stir often so they do not burn and release their natural sweetness.

Add Garlic and Spices

  • Add minced garlic, paprika, Cajun seasoning, thyme, salt, and pepper. Stir well. Let spices cook for one minute. This helps bring out their full aroma and rich taste.

Add Rice and Liquids

  • Add rice, diced tomatoes, and chicken broth. Stir everything together. Make sure rice is fully covered with liquid. Bring the mixture to a gentle boil.

Simmer the Dish

  • Reduce heat to low and cover the pot. Let it cook for about 20 minutes. Stir once or twice. This allows the rice to absorb all the flavors slowly.

Add Shrimp and Meat

  • Add cooked sausage, chicken, and shrimp to the pot. Stir gently. Cover again and cook for 5 to 7 minutes until shrimp turns pink and fully cooked.

Finish and Serve
