Ingredients

  • 1 pound breakfast sausage
  • 3 tablespoons all-purpose flour
  • 3 cups whole milk
  • 1 teaspoon black pepper
  • ½ teaspoon salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon crushed red pepper flakes
  • 1 tablespoon butter
  • Warm biscuits for serving

Instructions

Cook the Sausage

  • Place a large skillet over medium heat. Add the breakfast sausage. Break it into small pieces while cooking. Stir often until browned and fully cooked. This usually takes about 8 minutes. Keep some grease in the skillet for flavor.

Add the Butter

  • Add butter to the cooked sausage. Stir gently until melted completely. The butter gives extra richness and smooth texture. This step also helps the flour blend evenly into the sausage mixture.

Stir in the Flour

  • Sprinkle flour over the sausage mixture slowly. Stir continuously for about 2 minutes. The flour should coat every sausage piece well. Cooking the flour removes the raw taste and helps thicken the gravy perfectly.

Pour in the Milk

  • Slowly pour milk into the skillet while whisking constantly. This prevents lumps from forming. Keep stirring gently as the gravy starts thickening. The mixture will become creamy and smooth after several minutes.

Add the Seasonings

  • Add salt, black pepper, garlic powder, and red pepper flakes. Stir everything well. Taste the gravy carefully. Adjust seasoning if needed. The black pepper gives the classic Southern gravy flavor everyone loves.

Simmer the Gravy

  • Reduce the heat to low. Let the gravy simmer gently for 5 minutes. Stir often to avoid sticking. The gravy will become thicker and richer during this time while keeping a creamy texture.

Serve and Enjoy

  • Spoon the hot sausage gravy over warm biscuits. Serve immediately while fresh and creamy. Add extra black pepper on top if desired. This dish tastes best warm straight from the skillet.

Notes

  • Use spicy sausage for extra heat.
  • Whole milk makes the gravy creamier.
  • Add cooked bacon for smoky flavor.
  • Stir constantly for smooth gravy.
  • Do not overcook after adding milk.
  • Add cheddar cheese for cheesy gravy.
  • Use turkey sausage for a lighter version.
  • Fresh biscuits taste better than canned biscuits.
  • Add a pinch of cayenne for spice lovers.
  • Keep the heat low while simmering.
