Ingredients

  • 1 pound ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can 15 oz kidney beans, drained
  • 1 can 15 oz black beans, drained
  • 1 can 15 oz corn, drained
  • 1 can 14.5 oz diced tomatoes
  • 1 can 10 oz tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 packet ranch seasoning
  • 2 cups beef broth
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

Optional toppings:

  • Shredded cheese
  • Sour cream
  • Cilantro
  • Tortilla chips

Instructions

Brown the Beef

  • Heat olive oil in a large pot over medium heat. Add ground beef and cook slowly. Break it apart while cooking. Keep cooking until no pink remains. Drain extra fat carefully. This step creates the strong flavor base for your soup.

Cook Onion and Garlic

  • Add chopped onion and garlic into the same pot. Stir well and cook for about five minutes. The onion should become soft and slightly golden. This step adds sweetness and aroma to your Paula Deen Taco Soup Recipe.

Add Seasonings

  • Sprinkle taco seasoning and ranch seasoning over the beef mixture. Stir everything very well. Make sure the meat is fully coated. Cook for two minutes so spices release strong flavor into the beef.

Add Tomatoes and Broth

  • Pour in diced tomatoes, green chili tomatoes, and beef broth. Stir slowly and mix well. Bring the pot to a gentle boil. The soup will start smelling rich and delicious at this stage.

Add Beans and Corn

  • Add kidney beans, black beans, and corn. Stir gently so everything mixes evenly. Lower the heat and let it simmer. This step makes the soup thick, hearty, and filling.

Simmer Slowly

  • Let the soup cook on low heat for 25–30 minutes. Stir occasionally to avoid sticking. Slow simmering helps all flavors come together perfectly. The taste becomes deeper and richer.

Taste and Adjust

  • Taste your soup carefully. Add salt and pepper if needed. You can also add extra seasoning if you want stronger flavor. Adjust it based on your personal preference.

Serve Hot

  • Ladle the soup into bowls. Add toppings like cheese or sour cream. Serve hot with tortilla chips or bread. Enjoy every warm and comforting bite.

Notes

  • Use ground turkey for a lighter version
  • Add jalapeños for extra heat
  • Use low-sodium broth for healthier option
  • Add bell peppers for color and crunch
  • Let soup rest 10 minutes before serving
  • Freeze in portions for easy meals
  • Add lime juice for fresh flavor
