For the Peach Filling
- 6 cups fresh peaches peeled and sliced
- ¼ cup granulated sugar
- 2 tablespoons brown sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 2 tablespoons cornstarch
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
For the Crisp Topping
- 1 cup all-purpose flour
- 1 cup old-fashioned rolled oats
- ¾ cup brown sugar
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- ½ cup unsalted butter melted
Prepare the Peaches
Wash, peel, and slice the peaches into even pieces. Place them into a large mixing bowl. Even slices cook evenly and create a soft, juicy filling.
Mix the Filling
Add the sugar, brown sugar, lemon juice, vanilla extract, cinnamon, salt, and cornstarch. Stir gently until every peach slice is coated with the mixture. This creates a thick, flavorful filling.
Make the Crisp Topping
In another bowl, combine the flour, oats, brown sugar, cinnamon, and salt. Pour in the melted butter. Mix gently with a fork until small crumbs form.
