Ingredients
  

For the Crust:

  • 1 3/4 cups graham cracker crumbs
  • 1/4 cup brown sugar
  • 1/2 cup melted butter

For the Cheesecake Layer:

  • 16 oz cream cheese softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract

For the Pecan Pie Topping:

  • 1 cup light corn syrup
  • 1/2 cup brown sugar
  • 2 eggs beaten
  • 1 tsp vanilla extract
  • 2 tbsp butter
  • 1 1/2 cups chopped pecans

Instructions
 

  • Preheat oven to 325°F (165°C).
  • Line the baking pan with parchment paper.
  • Combine crust ingredients in a bowl.
  • Press crust mixture into the prepared pan.
  • Bake crust for 10 minutes and cool.
  • Mix cream cheese and sugar until smooth.
  • Add eggs and vanilla; mix until blended.
  • Pour cheesecake layer over cooled crust.
  • Bake for 25 minutes until slightly set.
  • While baking, make the pecan topping.
  • In saucepan, mix syrup, sugar, eggs, vanilla, butter.
  • Heat on medium, stirring constantly for 5 minutes.
  • Stir in chopped pecans and remove from heat.
  • Pour topping over baked cheesecake layer.
  • Bake again for 25 minutes until golden and set.
  • Cool completely before cutting into squares.

  1. Use parchment for easy bar removal.
  2. Always cool before slicing clean bars.
  3. Use room-temperature cream cheese for smoothness.
  4. Toast pecans for extra depth of flavor.
