Ingredients

  • 2 thick-cut pork chops about 1.5 inches thick
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 garlic cloves minced
  • 1 tbsp brown sugar
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp onion powder
  • 1/2 tsp chili flakes optional
  • 2 tbsp apple juice or broth
  • Fresh parsley for garnish

Instructions

Season the Pork Chops

  • Pat the pork chops dry using paper towels. This helps them brown better. Mix salt, pepper, paprika, and onion powder. Rub the seasoning all over the meat. Let it rest for 10 minutes so flavors soak in nicely.

Heat the Pan

  • Place a large skillet on medium heat. Add olive oil and let it warm up slowly. The oil should shimmer but not smoke. This step ensures the pork chops cook evenly and develop a nice crust.

Sear the Pork Chops

  • Place the pork chops in the hot pan carefully. Cook each side for 3–4 minutes. Do not move them too much. This helps create a golden, crispy outer layer that locks in juices.

Add Butter and Garlic

  • Add butter and minced garlic into the pan. Tilt the pan slightly. Use a spoon to baste the pork chops with melted butter. This gives rich flavor and keeps the meat moist.

Add Sweet and Smoky Flavor

  • Sprinkle brown sugar over the pork chops. Pour in apple juice or broth. This creates a light glaze. The sweetness balances the smoky spices and adds depth to the dish.

Finish in Oven

  • Transfer the skillet to a preheated oven at 180°C (350°F). Cook for 10–12 minutes. Use a meat thermometer if possible. The inside should reach safe temperature without overcooking.

Rest Before Serving

  • Remove pork chops from the oven. Cover loosely with foil. Let them rest for 5 minutes. This step keeps the juices inside and makes every bite tender and juicy.

Garnish and Serve

  • Sprinkle fresh parsley on top. Serve hot with your favorite sides. The aroma at this stage is simply irresistible.

Notes

  • Use bone-in pork chops for more flavor
  • Add honey instead of brown sugar for a different taste
  • Try grilling instead of pan-searing for smoky flavor
  • Marinate overnight for deeper taste
  • Add a splash of lemon juice for freshness
