Ingredients
  

  • 1 lb beef stew meat cubed
  • 1 cup pearl barley rinsed
  • 1 onion chopped
  • 2 carrots diced
  • 2 celery stalks chopped
  • 3 cloves garlic minced
  • 1 tbsp olive oil
  • 6 cups beef broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • Salt to taste
  • Black pepper to taste
  • 1 tbsp Worcestershire sauce
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Heat oil in a large soup pot.
  • Add beef. Cook until brown on all sides.
  • Stir in onions, garlic, carrots, and celery.
  • Cook vegetables until soft, about 5 minutes.
  • Pour in beef broth and Worcestershire sauce.
  • Add barley, herbs, bay leaves, salt, and pepper.
  • Bring soup to a boil over medium heat.
  • Reduce heat. Cover and simmer for 1 hour.
  • Stir occasionally to avoid sticking at the bottom.
  • Remove bay leaves. Sprinkle parsley before serving.

Notes

  1. Use beef chuck for better flavor and texture.
  2. Rinse barley before cooking to reduce starchiness.
  3. Add extra broth if the soup thickens too much.
  4. Freeze leftovers for up to three months.
  5. Add a splash of lemon juice before serving.
