Ingredients
  

  • 1 pound ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups red enchilada sauce
  • 8 flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 tablespoons olive oil

Instructions
 

  • Preheat oven to 375°F.
  • Heat oil in skillet over medium heat.
  • Add onion and cook until soft.
  • Add garlic and cook briefly.
  • Add ground beef and cook fully.
  • Drain excess grease carefully.
  • Stir in spices and salt.
  • Add half enchilada sauce.
  • Simmer for five minutes.
  • Fill tortillas with beef mixture.
  • Roll tortillas tightly.
  • Place seam-side down in dish.
  • Pour remaining sauce on top.
  • Sprinkle cheeses evenly.
  • Cover with foil and bake 20 minutes.
  • Uncover and bake 10 minutes more.
