Ingredients

  • 4 cups cooked chicken breast shredded or cubed
  • 1 cup mayonnaise full fat is best
  • 1/2 cup sour cream
  • 1 tablespoon fresh lemon juice
  • 1 cup red grapes halved
  • 1 cup celery finely diced
  • 1/2 cup green onions sliced thin
  • 1/2 cup pecans toasted and chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon fresh dill optional

Instructions

Prepare the Chicken

  • Start with cold, cooked chicken. You can use rotisserie chicken or boiled chicken breasts. Shred the meat into bite-sized pieces using two forks. Place the chicken into a very large mixing bowl.

Chop the Fresh Produce

  • Wash your grapes and celery well. Cut the grapes in half lengthwise. Slice the celery into small, uniform bits. Add the grapes, celery, and sliced green onions to the bowl with the chicken.

Mix the Creamy Dressing

  • In a separate small bowl, whisk the mayo and sour cream together. Add the lemon juice, salt, and pepper. Stir until the dressing is smooth. This ensures the seasoning is evenly spread out.

Combine Everything Together

  • Pour the creamy dressing over the chicken mixture. Use a large spoon to toss everything gently. Make sure every piece of chicken is coated. Do not over-mix or the grapes might get mushy.

Add the Toasted Pecans

  • Add the chopped pecans right before you are ready to serve. This keeps the nuts crunchy and delicious. Stir them in quickly. If you add them too early, they might lose their snap.

Chill and Serve

  • Place the salad in the fridge for at least 30 minutes. This helps the flavors meld together beautifully. Serve it on a bed of lettuce or inside a flaky, buttery croissant.

Notes

  • Toast your nuts: Always toast the pecans in a dry pan for two minutes. It brings out a much deeper flavor.
  • Fruit swap: If you don't like grapes, try using diced apples or dried cranberries.
  • Greek Yogurt: For a lighter version, swap the sour cream for plain Greek yogurt. It adds a nice tang.
  • Add herbs: Fresh tarragon or parsley tastes amazing in this recipe.
  • Chicken type: Using a mix of white and dark meat makes the salad extra juicy and flavorful.
