Equipment

  • Deep fryer or large heavy-duty skillet
  • Kitchen thermometer
  • Tongs
  • Mixing bowls
  • Whisk
  • Measuring cups and spoons
  • Paper towels (for draining)

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup buttermilk
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon cayenne pepper adjust to taste
  • 1 tablespoon white pepper
  • 1 tablespoon salt
  • Vegetable oil for frying

Instructions

  • Marinate the Chicken: In a bowl, whisk together the buttermilk, eggs, and half of the spices. Submerge the chicken pieces in the mixture and let marinate for at least 1 hour in the refrigerator.
  • Prepare the Flour Mixture: In another bowl, combine the flour with the remaining spices.
  • Dredge the Chicken: Remove chicken from the marinade, letting excess drip off. Dredge each piece thoroughly in the flour mixture, shaking off any excess.
  • Heat the Oil: Heat the oil in your fryer or skillet to 350°F (175°C). Use a thermometer to ensure accuracy.
  • Fry the Chicken: Fry the chicken in batches, careful not to overcrowd the pan, for about 8-10 minutes per side or until golden brown and cooked through. Internal temperature should reach 165°F (74°C).
  • Drain: Place the fried chicken on a plate lined with paper towels to absorb excess oil.

Notes

  • Spicy Kick: Add extra cayenne pepper or include a teaspoon of hot sauce to the marinade for a spicier version.
  • Herb Infusion: Add dried thyme or oregano to the flour mixture for an herby touch.
  • Gluten-Free: Use almond flour or gluten-free all-purpose flour for a gluten-free version.
  • Buttermilk Substitute: If you're out of buttermilk, mix a tablespoon of vinegar with a cup of milk and let it sit for five minutes.
  • Air Fryer Option: For a healthier version, use an air fryer. Spray the breaded chicken with a bit of oil and cook at 390°F (200°C) for about 12 minutes, flipping halfway through.
