Ingredients
  

  • 2 tablespoons olive oil
  • 1 onion finely chopped
  • 2 garlic cloves minced
  • 1 carrot grated
  • 2 cans 28 ounces each crushed tomatoes
  • 1 can 6 ounces tomato paste
  • 2 tablespoons sugar
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/2 cup water optional, for thinner sauce

Instructions
 

  • Heat the Oil: In a large pot, heat the olive oil over medium heat. Incorporate the chopped onion and minced garlic, cooking until the onions become clear and soft.
  • Add Carrots: Stir in the grated carrot and cook for about 2 minutes, just enough to soften slightly.
  • Tomatoes and Seasoning: Add the crushed tomatoes, tomato paste, sugar, dried basil, and oregano. Mix well.
  • Simmer: Reduce the heat to low and let the sauce simmer uncovered for 20-30 minutes, stirring occasionally. If the sauce thickens too much, add a bit of water to reach your desired consistency.
  • Season to Taste: Season with salt and pepper. Modify the seasonings to suit your individual flavor preferences.
