- Fresh salmon bones: 500 grams
- 2 Tablespoons Olive oil
- 4 Garlic cloves minced
- 1 Onion finely chopped
- 2 Carrots diced
- 2 Celery stalks chopped
- tbsp Tomato paste
- 1/2 Cup White wine
- 4 Cups Chicken or vegetable broth
- 2 Bay leaves
- 2 Sprigs Fresh thyme
- Salt and pepper to taste
- Fresh parsley For garnish
Preparing the Salmon Bones
Rinse the salmon bones under cold water to remove any impurities.Pat them dry with paper towels and set aside.
Sautéing the Aromatics
Heat olive oil in a large pot over medium heat.Add the minced garlic and chopped onion to the pot and sauté until translucent.Stir in the diced carrots and chopped celery and cook for another 5 minutes until slightly softened.
Cooking the Salmon Bones
