Ingredients
  

  • 1 ½ lbs beef chuck roast sliced
  • 4 cups beef broth
  • ½ cup low-sodium soy sauce
  • 3 tbsp hoisin sauce
  • 2 tbsp brown sugar
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp ground ginger
  • 1 tbsp minced garlic
  • ½ tsp red pepper flakes optional
  • 4 ramen noodle blocks discard seasoning
  • 1 cup shredded carrots
  • 1 cup sliced mushrooms
  • 1 cup baby spinach
  • 2 green onions chopped
  • Sesame seeds for garnish

Instructions
 

  • Slice beef into thin strips.
  • Add beef to the slow cooker.
  • Pour in beef broth and soy sauce.
  • Add hoisin, brown sugar, and sesame oil.
  • Mix in vinegar, ginger, and garlic.
  • Sprinkle red pepper flakes if using.
  • Stir everything gently to combine.
  • Cover and cook on low 6 hours.
  • After 6 hours, add mushrooms and carrots.
  • Cook for another 30 minutes.
  • Boil ramen noodles separately, drain well.
  • Stir noodles into slow cooker.
  • Add baby spinach and green onions.
  • Let sit for 5 minutes before serving.
  • Garnish with sesame seeds and enjoy.

Notes

  1. Slice beef thin for faster cooking.
  2. Use low-sodium broth to avoid saltiness.
  3. Add ramen at the very end.
  4. Don’t overcook noodles in the broth.
  5. Add a boiled egg for extra protein.
