Ingredients
  

  • 2 lbs baby red potatoes
  • 1 cup mayonnaise
  • ½ cup sour cream
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp salt
  • ½ tsp black pepper
  • 6 slices cooked bacon chopped
  • ½ cup chopped green onions
  • ½ cup diced red onion
  • 2 tbsp chopped parsley
  • Optional: ¼ tsp smoked paprika

Instructions
 

  • Wash and halve potatoes.
  • Boil in salted water until fork-tender.
  • Drain and cool completely.
  • In a bowl, mix mayo, sour cream, mustard.
  • Add vinegar, salt, pepper. Mix again.
  • Stir in onions, bacon, parsley.
  • Fold in potatoes gently.
  • Sprinkle paprika (optional) for color.
  • Chill for at least 2 hours.
  • Serve cold or at room temperature.
