Ingredients
  

  • 2 cups of jasmine rice cooked and cooled
  • 2 tablespoons of vegetable oil
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 1/2 cup of diced carrots
  • 1/2 cup of peas
  • 1/2 cup of corn kernels
  • 1/2 cup of chopped bell peppers
  • 2 eggs beaten
  • 2 tablespoons of soy sauce
  • 1 tablespoon of oyster sauce
  • Salt and pepper to taste
  • 2 green onions sliced for garnish

Instructions
 

  • Heat the Oil: In a large wok or frying pan, heat the vegetable oil over medium heat.
  • Sauté Aromatics: Add the chopped onion and garlic, sautéing until they become translucent.
  • Cook Vegetables: Stir in carrots, peas, corn, and bell peppers. Cook until just tender.
  • Add Rice: Gently fold in the cooked rice, ensuring not to mash the grains.
  • Make Space for Eggs: Push the rice mixture to the side of the pan, pour the beaten eggs into the cleared space, and scramble.
  • Mix Everything: Once the eggs are cooked, mix them with the rice and vegetables.
  • Season: Drizzle soy sauce and oyster sauce over the rice, mixing well. Season with salt and pepper.
  • Serve: Garnish with green onions before serving.

Notes

  • Rice Texture: Use day-old rice for the best texture as it's drier and less sticky.
