Ingredients
  

  • 2 cups cooked pinto beans or one 15 oz. can, drained and rinsed
  • 1/4 cup unsalted butter or lard
  • 1/2 cup vegetable broth or water adjust for desired consistency
  • 1/2 medium onion finely chopped
  • 2 garlic cloves minced
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • Optional: 1/4 cup shredded cheddar cheese for garnish

Instructions
 

  • Prepare the Base: In a large saucepan, melt the butter or lard over medium heat. Add the chopped onion and garlic, sautéing until they’re fragrant and translucent (about 3-4 minutes).
  • Add Beans and Spices: Stir in the cooked pinto beans, ground cumin, smoked paprika, and a pinch of salt and pepper. Let everything cook together for 2-3 minutes to combine the flavors.
  • Mash the Beans: Reduce the heat to low and use a potato masher or immersion blender to mash the beans. Leave some texture for authenticity, or make them smooth—your choice!
  • Adjust Consistency: Gradually stir in the vegetable broth or water, adding a little at a time until you reach your desired consistency. Cook for another 5 minutes, stirring often.
  • Serve and Enjoy: Remove from heat, transfer to a serving bowl, and garnish with shredded cheese if desired. Serve warm as a side dish or a dip.
