Ingredients
  

  • 2 boneless chicken breasts diced
  • 2 tbsp olive oil
  • 1 cup shredded carrots
  • 1 cup shredded cabbage
  • 1 red bell pepper sliced thin
  • ½ cucumber sliced
  • 4 large flour tortillas
  • ¼ cup chopped cilantro
  • ¼ cup roasted peanuts crushed

Peanut Sauce:

  • ½ cup creamy peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp lime juice
  • 1 tbsp honey
  • 1 clove garlic minced
  • 1 tsp fresh ginger grated
  • 2 tbsp warm water

Instructions
 

  • Heat skillet and add olive oil.
  • Cook chicken until golden brown.
  • Remove chicken and set aside.
  • In a bowl, whisk peanut butter.
  • Add soy sauce, vinegar, lime juice.
  • Mix in honey, garlic, ginger, water.
  • Stir until sauce becomes creamy.
  • Lay tortillas on a flat surface.
  • Spread peanut sauce evenly inside.
  • Add chicken, carrots, cabbage, bell pepper.
  • Place cucumber slices and sprinkle cilantro.
  • Top with crushed roasted peanuts.
  • Roll tortilla tightly into wrap.
  • Slice diagonally and serve fresh.
