  • ¾ cup brown sugar
  • ½ cup white sugar
  • 1 large egg
  • ¾ cup canned pumpkin puree
  • 1 tsp vanilla extract

For the Pumpkin Pie Filling:

  • ½ cup pumpkin puree
  • ¼ cup cream cheese softened
  • 2 tbsp brown sugar
  • ¼ tsp cinnamon
  • Pinch of nutmeg

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Line baking sheet with parchment paper.
  • Mix flour, baking soda, salt, and spices.
  • Cream butter and both sugars until fluffy.
  • Add egg, pumpkin puree, and vanilla extract.
  • Slowly add dry mix into wet ingredients.
  • Stir until dough forms soft texture.
  • Chill dough for 30 minutes in fridge.
  • Mix filling ingredients in small bowl.
  • Scoop cookie dough using cookie scoop.
  • Flatten slightly with your hand.
  • Add small spoon of pumpkin filling inside.
  • Cover with another small dough portion.
  • Seal edges carefully with fingers.
  • Bake cookies for 12 to 14 minutes.
  • Cool cookies on wire rack completely.
  • Serve warm or at room temperature.
