Line baking sheet with parchment paper.

Cream butter and both sugars until fluffy.
Add egg, pumpkin puree, and vanilla extract.
Slowly add dry mix into wet ingredients.
Stir until dough forms soft texture.
Chill dough for 30 minutes in fridge.
Mix filling ingredients in small bowl.
Scoop cookie dough using cookie scoop.
Flatten slightly with your hand.
Add small spoon of pumpkin filling inside.
Cover with another small dough portion.
Seal edges carefully with fingers.
Bake cookies for 12 to 14 minutes.
Cool cookies on wire rack completely.
Serve warm or at room temperature.
