Ingredients
  

  • 2 cups cooked chicken shredded
  • 1 ½ cups frozen mixed vegetables
  • 1 cup potatoes diced
  • 1 small onion chopped
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 ½ cups chicken broth
  • ½ cup heavy cream
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 ready-to-bake pie crust Trader Joe’s recommended
  • 1 egg beaten (for wash)

Instructions
 

  • Preheat oven to 375°F.
  • Melt butter in saucepan.
  • Add onion, cook until soft.
  • Stir in flour, whisk until smooth.
  • Pour chicken broth slowly.
  • Add heavy cream, stir well.
  • Add potatoes, cook until tender.
  • Mix in vegetables and chicken.
  • Season with salt, pepper, thyme, garlic.
  • Roll pie crust onto dish.
  • Pour filling into crust.
  • Place second crust on top.
  • Seal edges with fork.
  • Brush with beaten egg.
  • Bake 35-40 minutes until golden.
