Ingredients

  • 2 cups cooked chickpeas or 1 can, drained and rinsed
  • 2 tablespoons olive oil
  • 1 medium onion finely chopped
  • 3 garlic cloves minced
  • 2 medium carrots diced
  • 2 celery stalks chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt adjust to taste
  • 4 cups vegetable broth
  • 1 can diced tomatoes 400g
  • 2 cups fresh spinach leaves
  • 1 tablespoon lemon juice
  • Optional: chili flakes for heat
  • Optional: grated Parmesan cheese for topping

Instructions

Heat the Olive Oil

  • Start by heating olive oil in a large pot over medium heat. Let it warm slowly. Add chopped onions and cook until soft. Stir often so they do not burn. This step builds the flavor base for your soup.

Add Garlic and Vegetables

  • Now add garlic, carrots, and celery to the pot. Cook everything for about five minutes. Stir gently so vegetables soften evenly. This creates a rich aroma. The base becomes sweet and savory at this stage.

Mix in Herbs and Spices

  • Add thyme, rosemary, salt, and black pepper. Stir well so spices coat the vegetables. Let them cook for one minute. This helps release strong Tuscan flavors. The kitchen will start smelling amazing and warm.

Add Chickpeas and Tomatoes

  • Now add chickpeas and diced tomatoes. Stir everything together slowly. Make sure all ingredients are mixed well. The soup will start looking colorful and thick. This step builds the body of the soup.

Pour in Vegetable Broth

  • Add vegetable broth to the pot. Mix gently and bring it to a boil. Once boiling, reduce heat to low. Let it simmer for 20 minutes. This helps all flavors combine perfectly.

Mash for Creaminess

  • Take a spoon and mash some chickpeas in the pot. Do not mash all of them. This creates a creamy texture naturally. The soup becomes thicker and richer without adding cream.

Add Spinach and Lemon

  • Add fresh spinach leaves and stir. Let them wilt for two minutes. Then add lemon juice for freshness. This step balances the soup with light and fresh flavor.

Final Taste Check

  • Taste the soup carefully. Adjust salt and pepper if needed. If you like spice, add chili flakes. Let it sit for five minutes before serving. The flavor becomes deeper with resting time.

Notes

  • Use canned chickpeas for quick cooking.
  • Add pasta for a more filling meal.
  • Blend half the soup for extra creaminess.
  • Add kale instead of spinach for stronger texture.
  • Use smoked paprika for a deeper flavor.
  • Drizzle extra olive oil before serving.
