Ingredients

For the Marinade

  • ½ cup olive oil
  • ¼ cup apple cider vinegar
  • 3 tablespoons honey
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons Dijon mustard
  • 4 garlic cloves minced
  • 1 tablespoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • ½ teaspoon cayenne pepper

For the Chicken

  • 2 pounds chicken thighs or chicken breasts

Instructions

Prepare the Marinade

  • Add olive oil, vinegar, honey, Worcestershire sauce, and Dijon mustard to a bowl. Whisk well until smooth. The mixture should look glossy and evenly combined before adding the seasonings.

Add the Seasonings

  • Mix in garlic, smoked paprika, onion powder, black pepper, salt, and cayenne pepper. Stir everything well. The spices should spread evenly throughout the marinade for the best flavor.

Prepare the Chicken

  • Pat the chicken dry with paper towels. This helps the marinade stick better. Place the chicken into a large zip-top bag or a shallow container.

Marinate the Chicken

  • Pour the marinade over the chicken. Turn each piece to coat completely. Seal the bag and place it in the refrigerator for at least four hours.

Preheat the Grill

  • Heat the grill to medium-high heat. Clean the grates and lightly oil them. This prevents sticking and helps create beautiful grill marks.

Remove Excess Marinade

  • Take the chicken out of the marinade. Let excess liquid drip off. Too much marinade can cause flare-ups while grilling and may burn quickly.

Grill the Chicken

  • Place the chicken on the hot grill. Cook for about six to eight minutes per side. Turn carefully with tongs to keep the chicken intact.

Check for Doneness

  • Use a meat thermometer to check the temperature. The chicken should reach 165°F. This ensures the meat is fully cooked and safe to eat.

Rest Before Serving

  • Move the chicken to a platter and let it rest for five minutes. This keeps the juices inside and makes every bite tender.

Notes

  • Marinate overnight for deeper flavor.
  • Use chicken thighs for extra juiciness.
  • Add fresh lime juice for a citrus twist.
  • Include chopped fresh herbs for freshness.
  • Reduce cayenne for a milder taste.
  • Try the marinade on turkey or pork.
  • Brush with BBQ sauce during the last minutes of grilling.
  • Use a grill pan if cooking indoors.
