Equipment

  • Large pot
  • Potato masher or electric mixer
  • Measuring cups and spoons
  • Knife and cutting board
  • Skillet (for bacon)
  • Oven-safe dish (optional, for baking)

Ingredients

  • 2 pounds of russet potatoes peeled and quartered
  • 1/2 cup whole milk
  • 1/4 cup butter
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 4 slices of bacon cooked and crumbled
  • 1/4 cup green onions finely chopped
  • Salt and pepper to taste

Instructions

  • Boil Potatoes: Place the potatoes in a large pot and cover with water. Bring to a boil over high heat, then reduce to a simmer and cook until the potatoes are tender, about 15-20 minutes.
  • Mash and Mix: Drain the potatoes and return them to the pot. Add butter and milk, then mash until smooth and creamy. Stir in the sour cream, half of the shredded cheese, salt, and pepper.
  • Add Toppings: Transfer the mashed potatoes to a serving dish or an oven-safe dish if you prefer them baked. Sprinkle with the remaining cheese, crumbled bacon, and green onions.
  • Bake (Optional): For a crispy top, bake in a preheated oven at 350°F for about 10-15 minutes or until the cheese is bubbly and golden.
  • Serve: Serve hot, garnished with extra green onions or sour cream if desired.

Notes

  1. Choose the Right Potatoes: Russet potatoes are ideal for mashing due to their starchy texture which makes for fluffier mashed potatoes.
  2. Cook Bacon Until Crispy: Ensuring the bacon is crispy provides a pleasant crunch and flavor contrast.
  3. Season Well: Potatoes absorb a lot of salt, so make sure to season well with salt and pepper after mashing.
  4. Use Real Butter and Full-Fat Milk: For the creamiest texture, avoid low-fat substitutes.
  5. Warm Your Dairy: Warm the milk and melt the butter before adding them to the potatoes for easier mixing.
