Ingredients
  

  • 2 boneless skinless chicken breasts, cut into strips
  • 8 ounces of fettuccine pasta
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons unsalted butter
  • Fresh parsley chopped (for garnish)
  • Extra grated Parmesan cheese for serving

Instructions
 

  • Cook Pasta: In a large pot, bring water to a boil and cook the fettuccine according to the package instructions until al dente. Drain and set aside.
  • Cook Chicken: While the pasta cooks, heat olive oil in a skillet over medium heat. Add chicken strips, season with salt and pepper, and cook until golden brown and thoroughly cooked, about 6-8 minutes. Remove from the skillet and set aside.
  • Make Alfredo Sauce: In the same skillet, add butter and minced garlic, cooking until fragrant. Pour in the heavy cream and bring to a simmer.
    Reduce heat and whisk in grated Parmesan until the sauce thickens. Season with salt and pepper.
  • Combine: Add the cooked pasta and chicken back to the skillet with the Alfredo sauce. Toss everything together until the pasta is well coated in sauce.
  • Serve: Garnish with chopped parsley and extra Parmesan cheese before serving.

Notes

  1. Pasta Water: Reserve a cup of pasta water to thin the sauce if it becomes too thick.
  2. Low Heat for Sauce: Keep the heat low when adding cheese to the sauce to prevent it from becoming grainy.
  3. Fresh Parmesan: Use freshly grated Parmesan for the best flavor and texture in the sauce.
  4. Don’t Overcook Pasta: Ensure the pasta is al dente, as it will continue to cook slightly in the hot sauce.
  5. Rest the Chicken: Let the cooked chicken rest for a few minutes before slicing to keep it juicy.
