Ingredients
  

  • 4 salmon fillets 6 ounces each
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 2 garlic cloves lightly crushed
  • 2 sprigs fresh thyme
  • 1 lemon cut into wedges

Instructions
 

Prepare the Salmon

  • Remove the salmon from the refrigerator about 15 minutes before cooking. Pat each fillet dry with paper towels. Season both sides with salt and pepper. Dry skin helps create a crispy texture during cooking.

Heat the Pan

  • Place a large skillet over medium-high heat. Add olive oil and allow it to become hot. The oil should shimmer slightly. A properly heated pan prevents the salmon from sticking.

Place Salmon Skin-Side Down

  • Carefully place the salmon fillets into the hot pan with the skin facing down. Press gently with a spatula for a few seconds. This helps the skin stay flat and cook evenly.

Cook the Skin

  • Let the salmon cook without moving it. Cook for about 5 to 6 minutes. The skin will become golden and crispy. Most of the cooking happens on this side.

Flip the Salmon

  • Carefully turn each fillet using a fish spatula. Cook the other side for about 2 minutes. The salmon should have a beautiful golden color and remain moist inside.

Add Butter and Herbs

  • Add butter, crushed garlic, and thyme to the pan. Allow the butter to melt completely. Tilt the pan slightly and spoon the butter over the salmon for extra flavor.

Finish Cooking

  • Continue basting for another 2 to 3 minutes. The salmon should flake easily with a fork. Avoid overcooking because salmon tastes best when it stays tender.

Serve Immediately

  • Transfer the salmon to serving plates. Squeeze fresh lemon juice over the top. Serve while hot for the best taste and texture.
