Ingredients
  

  • 1 cup long-grain white rice
  • 2 tablespoons olive oil
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 2 cups chicken or vegetable broth
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Juice of 1 large lemon
  • 1 teaspoon lemon zest
  • 1 tablespoon chopped fresh dill or parsley

Instructions
 

  • Rinse rice under cold water. Drain well.
  • Heat olive oil in a pan.
  • Add onions. Sauté until soft.
  • Stir in garlic. Cook for 1 minute.
  • Add rice. Stir to coat evenly.
  • Pour in broth. Add salt and pepper.
  • Bring to a boil. Stir once.
  • Cover and lower heat.
  • Simmer for 18 minutes.
  • Remove from heat. Let sit, covered.
  • After 5 minutes, fluff with fork.
  • Stir in lemon juice and zest.
  • Add dill or parsley. Mix gently.
  • Taste and adjust seasoning.
  • Serve warm with your meal.

Notes

  1. Rinse rice to remove excess starch.
  2. Use fresh lemon for bright flavor.
  3. Avoid overcooking—rice should stay fluffy.
  4. Stir once before covering and simmering.
  5. Let the rice sit before serving.
  6. Add more broth if rice seems dry.
