Ingredients

  • 3 pounds chuck roast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 large onion sliced
  • 4 carrots peeled and chopped
  • 3 potatoes chopped
  • 3 garlic cloves minced
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Instructions

Season the Beef

  • Pat the chuck roast dry using paper towels. Sprinkle salt, pepper, and garlic powder over every side. This helps the meat develop a rich flavor while cooking slowly in the crockpot.

Sear the Roast

  • Heat olive oil in a large skillet over medium-high heat. Add the roast carefully. Cook each side for about three minutes until brown. This step locks in flavor beautifully.

Prepare the Vegetables

  • Place chopped carrots, potatoes, onions, and garlic into the crockpot. Spread them evenly across the bottom. These vegetables soak up all the delicious juices while cooking.

Add the Roast

  • Place the browned roast over the vegetables carefully. The meat should sit nicely on top. This keeps the vegetables from becoming too soft during cooking.

Make the Sauce

  • In a bowl, mix beef broth, tomato paste, and Worcestershire sauce. Stir well until smooth. Pour the mixture slowly over the roast and vegetables inside the crockpot.

Add Fresh Herbs

  • Place rosemary and thyme sprigs on top of the roast. Fresh herbs make the flavor richer and more comforting. They also give the kitchen an amazing smell.

Slow Cook the Roast

  • Cover the crockpot with the lid tightly. Cook on low for eight hours. The beef should become tender enough to pull apart easily with a fork.

Make the Gravy

  • Remove the roast and vegetables carefully. Mix cornstarch with water in a small bowl. Stir it into the cooking liquid. Cook for ten minutes until thickened.

Serve and Enjoy

  • Slice or shred the roast gently. Serve it with vegetables and warm gravy. Add fresh parsley if you like extra color and freshness on top.

Notes

  • Use chuck roast for the best tender texture.
  • Sear the beef before slow cooking for deeper flavor.
  • Add mushrooms for extra richness.
  • Use red wine instead of some broth for bold taste.
  • Baby potatoes work great in this recipe.
  • Add celery for extra flavor.
  • Cook on low instead of high for softer meat.
  • Leftover roast tastes even better the next day.
