Ingredients
  

  • 1 cup fresh pineapple chunks
  • 1/2 cup strawberries hulled
  • 1 small beet peeled and chopped
  • 1/2 lemon juiced
  • 1/2 inch fresh ginger peeled
  • 1 tablespoon fresh mint leaves
  • 1/2 cucumber peeled and chopped
  • 1.5 cups coconut water or filtered water
  • 1 teaspoon honey or agave optional

Instructions
 

  • Wash all produce thoroughly to remove dirt and pesticides.
  • Chop ingredients into blender-friendly pieces.
  • Add everything to a high-speed blender: pineapple, strawberries, beet, cucumber, ginger, lemon juice, mint, and water.
  • Blend on high until completely smooth.
  • Strain the mixture using a fine mesh strainer or cheesecloth to remove pulp (optional, depending on your texture preference).
  • Step 6:
  • Taste test and add honey or agave if extra sweetness is needed.
  • Pour into a glass jar and refrigerate for up to 48 hours.
  • Serve chilled, ideally on an empty stomach for best absorption.
